Family tradition has taught me love for the product and respect for quality.
Cooking is an incredibly unique process, intimately linked to the DNA of each chef. When you cook, you never forget who you are, where you come from, who you are cooking for, and especially where you are cooking. Angel has countless signature recipes. The first is the Tuna Tostada, a tribute to his mother. The second is Lobster Maki, a festive dish he used to prepare for his father on special occasions. When he starts designing a recipe, he aims to capture the authentic flavour of each ingredient.
ENVIRONMENTAL AWARENESS
Angel Carbajal proudly supports emerging agricultural enterprises in the region. His own Huerta, "Looking Flowers," is part of the new generation of environmentally conscious local farmers.
